Chefs in India and Pakistan have a secret weapon known only to a lucky few: It's called the tandoor, and it turns ordinary bread and meat into delicious, smoky, savory delights. A tandoor is a clay oven—or, in modern kitchens, an electrical one—shaped like a cylinder or beehive. Traditionally, a tandoor would be placed in the ground so that the earth would work as an insulator. This way, a fire could be built in the bottom of the cylinder and maintain a very high and steady heat. Meat speared on a skewer and cooked in or over a tandoor will have its succulent juices seared in. Dough flattened to the inside of a tandoor will cook quickly, created a delicious toasty flavor and a chewy texture.
